Did you look at Kudzucraft.com? I think hea has a couple of SOF Canoe designs.

I'm not really a fan of Kudzu's canoe. It isn't flat enough on the bottom for my liking. That tends to happen with a lot of skin on frame canoes that I see. Most of the kayak builders don't have a great eye for canoes and you end up with a canoe that is only stable if you're sitting on the bottom, because they end up with too much vee or a full arch instead of a shallow arch.

Having said that, Kudzu's books and the forum he hosts are great places to learn the construction methods.
