I picked up a 10" t-fal on sale for $14, removed handle and made a removable one from aluminum. It gets pretty hot so I may make another from phenolic. I think I like it and the price was right. It still needs a lid and I'm undecided on what to do for that....any ideas?

You can buy universal fry pan lids (could even trim it to size if it is the only pan you've ever use it on), or you could just make one with sheet metal. If weight isn't an issue (assuming this isn't for backpacking), just get another pan the same size. That way you have 2 frying pans to use, but if you need a lid, you can flip one upside down to cover the other.

The second pan for a lid is a good idea. I'll have to stop and see if they have another one. I have been toying with making a lid from aluminum, maybe 1/4" thick that could serve as a griddle but I'm not sure how useful it would be.

You could always just use a gripper type handle instead of a hard mounted one. I do that with all my pots to make them easier to pack. The first thing I do is cut the handles off. And yes,I just buy them from the second hand store.
My frying pans have the folding handles and I have not had any issues with them being hot to the touch. I think the last one was actually an REI that I got at MEC. Canadian Tire always has stuff too for cheap.

I don't like the pot gripper on the fry pan, often I will steady the handle with a gloved hand while turning something.
I cooked a bannock in this pan today and it worked great other than the smokin hot handle. I will try make a phenolic one this week.
